Aronian berries can be added to any of your existing fruit containing recipes.  Simply substitute 1/2 of your recipes fruit for aronia berries to increase the nutritional benefits of your dessert.   

Elderberry pie recipe; (Ingredients listed verbatim, all in quotes and cited on other page)​ Recipe provided by allrecipe.com

  • "Pastry dough for a 9 inch double crust pie

  • 4 cups of Elderberries

  • 1 cup of white sugar

  • 3 tablespoons of cornstarch

  • 1 tablespoon of lemon juice

  • *An under layer of foil should help as berries may bubble over.*

  1. Preheat oven to 375º F or 190º C

  2. Mix cornstarch in a little bit of water and add to berries and sugar. Cook, stirring constantly until desired thickness. Add more cornstarch if not thick enough. Add lemon juice.

  3. Pour into bottom crust, dot with butter, make top crust to desired shape, lattice or whole crust.

  4. Bake for 40 minutes at 375º F (190º C) or until crust is browned and berries are rising through."

 

Aronia Berry Muffin Recipe; (Recipe makes eighteen regular size muffins, twenty minute prep time) Recipe by the MAA, instructions listed verbatim, all in quotes.

  • 1/2 cup butter [room temperature]

  • 1 cup granulated sugar

  • 2 large eggs

  • 1 teaspoon of vanilla

  • 1 teaspoon baking powder

  • 1/4 teaspoon of salt

  • 2 cups of all-purpose flour

  • 1/2 cup of milk

  • 2 1/2 cups of frozen aronia berries

  • 1 teaspoon of nutmeg

  1. Pre-heat oven to 375ºF

  2. Grease 18 regular size muffin cups, or 12 for large muffins.

  3. In bowl mix butter until creamy, add sugar and beat until pale and fluffy

  4. Add each egg, one at a time, beating after each addition.

  5. Add vanilla, baking powder, and salt, mix in.

  6. With spoon fold in half of flour, than half of milk into batter; repeat.

  7. Fold in aronia berries.

  8. Spoon into muffin cups/tray and sprinkle nutmeg onto each muffin.

  9. Bake 15-20 minutes, until golden and springy to touch."

Honey Berry/Haskap Crumble Recipe; Recipe by allourfingersinthepie.blogspot.ca., instructions listed verbatim, all in quotes.

  • 1 1/2 cup unbleached flour 375 mL.

  • 1 1/2 cup rolled oats 375 mL.

  • 3/4 cup Chopped Almonds 175 mL.

  • 1 cup Brown Sugar 250 mL.

  • 1 teaspoon Baking Powder 15 mL.

  • 1/2 teaspoon Cinnamon 7 mL.

  • 1/4 teaspoon Salt 1 mL.

  • 1 cup Unsalted Butter 250 mL., at room temperature.

  • 2 cups Honeyberries

  1. Preheat oven to 375F (190 C).

  2. Grease a nine x nine inch (22 x 22 cm) baking pan.

  3. In a large bowl, mix dry ingredients except almonds.

  4. Cut in the butter until the mixture is crumbly.

  5. Set aside one cup (250 mL) of the mixture for topping.

  6. Press the crumble on the bottom of the baking pan.

  7. Evenly spread the jam over the crumble. A thin layer is all you need.

  8. Sprinkle with the chopped almonds and then the reserved crumb mixture. Pat down gently.

  9. Bake for 30 to 35 minutes until golden.

  10. Cool completely before cutting into squares."
